Malay Pickle
½ lb Dates (optional) ¼ lb Carrots
¼ lb Green Chillies ½ lb Onions
¼ lb Green pawpaw ¼ lb Long Beans
1/8 lb Mustard 2 segments Garlic
Ginger about an inch 5 - 8 Dry Chillies
! Bottle Vinegar
Make small slits in the chillies and boil them in vinegar until partially done.
Dice all other vegetables and boil them in salt and vinegar until partially done.
Grind the mustard, dry chillies, garlic and ginger with little vinegar,
Add all boiled vegetables and the dates with the ground ingredients.
Let it cool before storing in glass bottles. Always use glass containers.
Vegetarian Cake
9 oz Butter 9 oz Sugar
9 oz Dates 15 oz Flour
5 oz Semolina 3 teaspoon baking powder
1 teaspoon baking soda 2 tablespoon cocoa
1 cup water 4 teaspoon vanilla
2 teaspoon lime juice ½ rose water (optional)
1 Can condensed milk
Chop dates and soak in 1 cup boiling water and baking soda for about 6 hrs or overnight. Sift flour, baking powder and cocoa. Beat the butter and sugar to a cream.
Add the flavourings. Fold in flour mixture, semolina, soaked dates and Condensed milk alternately.Pour the mixture into a greased pan and bake in a pre-heated
350 degrees F oven, for about an hour.
To check whether the cake is done, insert a skewer into the centre of the cake. If the skewer comes out clean, the cake is cooked. Allow the cake to cool before slicing. & serving.
